Bacon tastes better, though. And is cheaper. And to be actually authentic one would use guanciale.

I'm just not a pancetta fan, really.

Yes, one of my alltime favorite dishes. And I do get a pancetta chub and cube my own.

Bacon has this awesome smokey flavor. And is cheap.

Also, I'm writing down the recipe for my friend Mel, and so it should be just as I made it for her.
